Secret Stash: Las Flores Chiroso
We are able to savor this award-winning coffee thanks to the fermentation experiments led
by Jhoan Vergara at the Las Flores agroforestry. The “thermal shock” process, followed by anaerobic fermentation, gives Chiroso an intense, lactic “candy” taste. But since we've had this coffee for a while, we are able to witness it mature with a complexity like no other.
One of our more interesting coffees roasted at a lower temperature, this anaerobic is sparklier and more vibrant in the cup. Experiment with your brew to be able to bring out its distinct orange sweetness and jasmine florality and you might find a hint of spice in the cup as you are able to slowly enjoy it.
